Breaking Bread

Gosh. I hope I didn’t really break the bread. I hope I just made a nice easy cut. Sawed it back and forth. Then ate it. Is that worse than simply breaking it? I am sure it didn’t feel a thing.

When I am feeling down, nothing makes me feel better than baking or cooking (and no, I do not think you have to be good at one or the either. That makes no sense at all). Just making something. Forming something from simple ingredients into a wondrous treat makes my whole heart heal.

And if nothing else, it gives me calories to burn while I cry. Or laugh. Or both.

And of all of the baked goods, bread absorbs tears the best. At least, that’s what I’ve been told.

My mother-in-law once taught me her secret to perfect bread. And now I’m telling you. And since she is unaware that this little blog exists, you won’t tell her.

See how that works.

Her secret is substituting whatever liquid the bread recipe calls for with apple juice.

Trust me. It is divine.

But with this recipe having honey, I did not want to do all apple juice and make it too sweet, so I simply substituted a cup of apple juice for the original recipe’s full 2 1/2 cups milk. I very slightly adapted this recipe from Taste of Home.

And I loved it.

It wasn’t broken.

The end.

Oh, wait, I still have to teach you how to make it.

Ingredients:

1 1/2 cups milk
2 packets active dry yeast (1/4 oz. ea.)
2 tsp. salt
1/4 cup melted salted butter
1 cup apple juice
7 cups flour + 1/2 cup to spread on counter
1/3 cup honey

Directions:

Pour milk and apple juice in a microwave proof container

Microwave on high one minute. Stir. If the liquid is still not warm to the touch microwave for thirty seconds more (it will depend on the depth of your cup. I just measured milk to 1 1/2 cups and then apple juice to the very top of a two cup measuring cup. You want your liquid warm and not hot. If it is too hot, it will kill your yeast. My mother-in-law uses a thermometer. I use my finger. Again, she’ll neve’ know. But if you like to be precise, the temperature should be 115 degrees Fahrenheit.

Dump yeast into your mixer. And yes, dump. Not pour. Why? Because “dump” is much more fun to say.

Pour (we can’t get carried away with the other word. It is about to get serious) milk/apple juice mixture in. Stir gently a few times. Let yeast activate for a few minutes (I get impatient. This is usually three minutes for me).

Pour in remaining ingredients. Pour the butter in last because you do not want the hot butter to kill the yeast.

Knead six minutes on your floured surface (or use your dough hook on your stand mixer if you have one. Ditzy me did not realize what that was for until my friend came over and asked me why I just didn’t just use that instead of kneading it by hand. Thankfully my husband did most of the work, because I am a kneady). Form into a large dough ball.

Grease round mixing bowl with butter.

Lay ball of dough in the bowl and then flip the dough once so that all sides of the dough are greased.

Turn oven on to its lowest setting for just two minutes. Do not let it get to a high temperature. Turn oven off. Place a damp dish towel over bowl of dough and place the bowl in the oven for an hour.

Make sure you leave plenty of room above the bowl for the dough to rise in the oven.

Remove bowl from the oven.

Remove the towel.

Punch dough in the middle. (The kids LOVE doing this).

Dough will deflate. Form dough into two loaves (I just rip mine in half, channeling my inner Hulk and just pat that baby into shape) and place into two, greased with butter, 9 X 5 loaf pans.

Place pans in oven to rise for thirty minutes (it will still be warm enough to do this).

Remove pans from oven. Turn oven to 375 degrees. Bake bread for 15 minutes. After fifteen minutes cover the tops of the bread with foil and cook for another eighteen minutes.

Remove loaves from oven. Turn oven off. Remove foil.

Turn loaves upside down onto a cooling rack one at a time and turn over so they are right side up again.

Let cool thirty minutes before eating.

I made the kids and myself a cute little table setting to eat our fresh homemade bread at. We all loved it. It created minimal clean up. And it definitely made the homemade bread feel much more special.

I would say that is not broken at all.

Summertime Pasta

This really should be called, “Cherry Tomato Broccoli Pesto Pasta.” But that’s a mouthful! This pasta reminds me of everything I love about summer. It is fresh. It is quick. It is easy. There is not any meat in the dish, but you do not miss it. My family loves this.

I recently indulged in a similar pasta dish at a local Italian restaurant. I wanted to try to recreate it at home. I searched for a recipe, but the closest I could find was this yummy one. The following recipe is loosely adapted from that one.

Ingredients:

1/4-1/2 tsp. red pepper flakes
1/4 cup white wine (I always use Riesling and it is fine. Any white non-bubbly wine will do)
1 clove of crushed garlic (or a handy dandy frozen cube)
6 oz. refrigerated pesto (pick your favorite. A bad pesto will ruin this dish)
1 12 oz. package fresh linguine (if you cannot find this a regular package of dried linguine is fine)
2 pint size containers of cherry tomatoes
3/4 tsp. salt
2 Tbsp. Olive oil
1 head of brocolli chopped (or one small steamable all ready chopped package)
5 small slices fresh mozarella (cut again into thirds)

First things first. Chop your broccoli heads up into large bite sized pieces and place into a large sealable gallon sized plastic bag. Or you could simply buy a small package of steam-able brocolli. I normally do that, but this time, my store was out. Seal the chopped broccoli crowns, place them in the bag and set aside.

Boil water in a large pot.

Chop three-quarters of your cherry tomatoes into half. Also cut mozzarella slices into bite sized pieces and set mozzarella pieces aside.

In a large skillet, heat up the olive oil over medium-low heat. Add garlic and cook one minute. Add halved cherry tomatoes and remaining whole tomatoes into the skillet. Add salt and red pepper flakes. Let simmer twelve minutes. Stir occassionally.

In the meantime, boil noodles according to the directions on the package. I prefer to use fresh pasta found in the refrigerated section. It cooks faster and generally just tastes better. But you can use boxed pasta, just be aware of the time difference. Before draining pasta, carefully reserve a cup of the pasta water and set aside. Drain the pasta and return the drained pasta to the pot it boiled in (with no water in it).

Pierce broccoli bag with fork two times. Microwave the bag for three and a half minutes on high.

After the tomatoes have simmered for twelve minutes, add wine and let simmer for two more minutes.

Add a little of the pasta water (about 1/4 cup) and broccoli. Mix.

Add pesto to the drained noodles. Add enough pasta water to make it easier to stir (about 1/4 cup. Do not add all of your reserved pasta water).

Add pesto noodles to the cherry tomato/broccoli mixture. Stir. Before plating add mozzarella to the pan and quickly mix. You do not want your mozzarella to melt too much.

Plate. And eat up! If you have picky kids, and they are old enough, I recommend letting them carefully cut the tomatoes and mozzarella when you are preparing this dish. It will make them feel like they made the dish and they will be more inclined to eat it. Both of my kids always have seconds. ; )

Modcloth Stylish Surprise: SHOES!

This post could also be titled, “Modcloth, you have my heart.”

You all ready know that because Modcloth embraces every woman by offering a variety of different sizes, it is the store that makes me smile the most. Add that to their amazing customer service and customer appreciation and that site just makes this girl’s shopping heart sing.

But this post really isn’t about that.

This post is about the amazing promotion Modcloh does every few months:

It took me awhile to get over my light headedness when my box containing my Modcloth Stylish Surprise* (explanation about stylish surprise at the bottom of this post) full of shoes arrived at the door. For $10, Modcloth picked a pair of random shoes for me in my size and sent them. Shipping is always free at Modcloth for orders over $50. So, I ordered five pairs (three for me and two for my daughter. This might seem selfish, but her feet are still growing. Mine are not).

My daughter and I were nervous and excited to open the box full of shoes.

But we did!

Boy, did we get lucky!

I found out about The Stylish Surprise the same day I put up my post about my March purchases. I had ordered the clothing surprise from them a year ago and liked what I received, but I have enough clothes. I wanted to try the shoe version. It intrigued me.

I also wanted to immediately do a post the moment I learned about the sale going on, but I did not want this blog to seem too consumerismy (another new word). I also had never ordered the shoe surprise before, and I was not sure if it was something I was willing to recommend (this is important to me. I got these beautiful Chelsea Crew Tia Pumps in mustard. They fit like a dream. I love them for evening fun. They are my favorite of the shoes I received.

My daughter got these cool Dollhouse combat boots. These are so her. She was thrilled. She has worn these all week.

I also got these Seychelles Two Birds Heels. They are SO tall. I could never actually wear these. I ended up giving them away to the sweetest eighteen year old girl I know. And she was happy. And I was happy. So, it all worked out.

My daughter got these Chelsea Crew Notch Your Step heels in red. I was jealous of these. They are adorable. More importantly, she is madly in love with them. And I would rather her have been happy than myself. Thankfully, we both were happy. She wore these last Thursday and her outfit was perfect with these shoes! So cute!

I also received these Chelsea Crew Class Treasurer Heels (funny enough, I was class treasurer… Or secretary. I can’t remember. I also do not remember doing a thing for that title. Maybe I needed these shoes). They are the most amazing orange color. I love them.

So, for $50 we received approximately $337 worth of shoes. This works out to roughly 85% in savings.

I would (and will) absolutely be partaking in these surprise sales again. Not only was it fun, but it was a great bargain, too.
