Mashed Potato Soup

I recently had mashed potato soup at a local eatery and wanted to recreate it at home. I loved the restaurant’s tart cheesiness of its soup. Instead of asking for the recipe, I decided to guess it out at home. This is what I like to do for fun. Yep. Weird.

I think the only difference might be the mirepoix instead of just onions and the use of regular pepper instead of white pepper (if I had to guess… And I did). I used the mirepoix because I wanted to add some additional vegetables hidden for the kids. And I wanted a deeper depth of flavor.

When I announced my intentions of taking my mashed potatoes and making a soup with the leftovers, my husband and son were aghast. They were coveting those mashed potatoes in all their decadent leftover glory. I do make some mean mashed potatoes, if I do say so myself, and they are so incredibly easy. I do not buy into that whole ricer theory or grating. Just mix the darn things and be done with it. ; ).

Mashed potato tip: After you add your cut potatoes to your pot of cold water: Bring them to a boil and then set your timer for twenty three minutes. Not twenty two. Not twenty four. Twenty three. Timing is key. Then immediately drain them. Return them to the pot and cook them for an additional minute, while stirring, to get all of the extra water out. I feel very strongly about this. Who knew?

For this recipe I followed my mashed potato recipe, but I used 6 large baking potatoes. I doubled the butter and added 1/2 cup of sour cream, and a pinch more salt.

I set aside approximately 1 and 1/2 cups of cooked potatoes in a bowl before I made my mashed potatoes (I refrigerated them), because I knew I wanted yummy chunks of potatoes in my soup the next day.

Ingredients:

Approximately 2 cups leftover Mashed potatoes
1 cup mirepoix (I get mine at Trader Joe’s)
1/2 tsp. dried mustard
3 cups shredded white cheddar cheese
1/2 stick butter
1/4 cup flour
5 cups chicken stock
1 1/2 cups cooked potato chunks set aside
1/8 tsp. ground pepper
1/2 tsp. salt
1/2 cup heavy whipping cream

Garnish

I make a pound of bacon and serve the whole crispy slab with it

I add my bacon to the oven (recipe here) before any of the following steps, so it is cooking at the same time the soup is.

Melt butter on low heat. Add mirepoix. Sprinkle a little salt on this so it sweats out. Cook on medium low heat for 8 minutes until vegetables are tender and onions are clear.

Add flour. Stir continuously for two minutes.

Add chicken stock. Simmer for five minutes.

Blend with stick blender until all of the vegetables are pureed.

Add mashed potatoes

Whisk. This took me about three minutes.

Add cream.

Stir. One minute.

Add cheese

Stir. Two minutes.

Add reserved potato chunks and stir.

Heat up until hot.

Turn off stovetop.

Serve in individual bowls. Garnish with bacon, sour cream, and chives (if desired). Please be careful! This soup is so hot! I burned the roof of my mouth…badly. Patience has never been my virtue.

After my family ate their dinner, both my husband and son both declared this an excellent use of the leftover potatoes. They are all ready asking me to make it again. It was scrumptious. If I do say so myself. And I do. : )

How To Get Your Framing Done Cheap…er

With so many framed paintings in our home, I have found it essential to figure out how to get my pictures framed without breaking my budget. I have learned some fabulous tricks. And this is the time of year to frame something, if you need it done.

Right now, Michael’s is doing their annual “Save 60% + an additional 15% off” of their custom framing prices (you can download your coupon by going to the site this week and clicking on coupons). Now, don’t get me wrong. The prices that they start with are very high and obviously meant for a discount. Their typical discount is 60%, sometimes as low as 50%. But I hoard all of my pieces that need custom framing for November. Because this coupon is as low as it is going to go.

I have formed a relationship with the framers at my local Michael’s store. It is where I choose to go. I trust them with my art.

But do you have to stick to Michael’s?

Absolutely not. I know most chain stores that have a framing department will match competitor’s coupons. I would also highly recommend looking into a local mom and pop framing store. Sometimes, that is the cheapest way to go. The local framers I loved went out of business six years ago, so I have had to learn how to play the pricing game with the big stores. However, before they went out of business, it was much cheaper for me to frame my pieces there without a coupon.

What if that is still too expensive? Well, I have a few secrets. No coupon needed. Because you can’t use the coupon for my following advice:

You can just put your art into a regular wall frame. You can do this as long as it is flat paper. Canvas will obviously not work here. This is the cheapest way to do it. I usually toss the matte the frame comes with or get a custom matte made for it ( more on this further down). This particular dragon painting was purchased on Etsy from LukaLuka. I actually kept the matte it came with. This was less than $15 to frame (sale price).

You can also use a regular picture frame for a canvas piece. This small little painting was framed in a regular 5 X 7 frame. I believe the frame itself was purchased on sale for $7. Michael’s did the backing for me. I do not think that cost more than $10 (my memory is fuzzy, but it was very inexpensive).

The custom framing department will put your art piece or picture into any frame. That is right: A tabletop frame, a regular picture frame, a backless frame, an antique frame. And it is much, much cheaper than custom framing. My daughter painted this piece for me three Christmases ago. It is a backless frame that I purchased on sale and they popped it in and did the backing for me.

The piece you are framing just has to fit inside of it. And this is a great way to get your canvas paintings framed cheaper. They will build you a custom backing with a wire. This usually costs between $5-20 depending on the size of your piece (plus the cost of the frame, which you would buy on sale, of course).

Matting: Let’s say you want your piece to pop. You like your frame. But you want a colored matte to make your picture more custom looking. I have a tip for this as well. Go to the custom framing counter and pick out a couple of colors of matting from their samples that you would like to get custom cut for your piece. But you are not going to use those colors, unless they all ready have a cut piece of that matte in the back. If they have your color or a similar color (and they have never not had either my first or second choice) all ready cut, it is significantly cheaper to use their scrap. Using a fresh piece of matting is very expensive. Your piece will not be affected quality wise. Just your wallet. I usually save 75% on my custom matting this way.

Framing is not cheap. But I definitely think it adds so much to every piece of art in our home. You just need to decide how you want your art to pop. We chose a long time ago to use mostly gold and silver frames. I like the classical look of them. And they make our fun art more toned down and cohesive. These are typically more. Of course. Going with a solid black frame will usually cost you much less. Our collection has been growing for fifteen years. It is good to stick with whatever you choose to do so you do not need to change out your frames in the years to come. If you are just starting out, I recommend really sitting down and thinking about what style you want to reflect in your home.

Art will be the base. The frames will be the jewelry.

With the holidays coming up and gifts that need framing, I have been saving up my money and my art for this sale. It takes two weeks for your custom framing job (they build the frame) to be done. Usually they will get my matte or backing done (if I am going that route instead) on a piece within one day.

Anthropologie November Reviews

Is it fair to call this “November Reviews” when I took these pictures in October? Hmmm. Well, I have never been one for technicalities. When I went to the two holiday workshops in the stores last month, I figured I might as well try on a few things while I was there. You know, if I must. Cause I had to, of course. Not because there were so many lovelies calling my name. Of course not.

I will warn you. You know how I’m lazy? Well, in one of the reviews, I could not be bothered to put on pants. That would have involved taking off my boots. And, even though I brought pants into the dressing room just for this reason, I did not use them. Life is more exciting this way. And lazy is what lazy does. Or rather does not do. So, you’ve been warned.

Here we have a pretty top. It is called the Brocade Peplum Top. Do you know I brought some pants into the dressing room to try on with this, as well? But I didn’t. I just used what I wore that day.

I don’t know about this top. I love the parakeets used in the pattern of this top. But I am not a fan of the shiny fabric. The peplum is cute. I think it is flattering. This shirt is not for me, but it would be cute for the holidays for someone who likes shimmer. I am wearing a size 6 here. It fits well.

This was all I tried on that day. I was hungry.

They had this wrap on the last chance rack. I thought it was lovely. I cannot find it online. If you know the name of it, please let me know.. Updated: Thank you Amles! Here is the link to the wrap. But I have no idea how to style this. I feel much older than I am in this. The pattern is beautiful, though.

Okay. Here we have Jenni wearing the Humboldt Tunic. It is a lovely shirt meant to be paired over leggings or jeans. Or, you know, the bright neon pink tights you had hiding under your dress because you thought no one would see them and you couldn’t find any socks. And if someone did catch a glimpse of them, well, maybe they would think you were edgy. Yea. Cause that is the word always used to describe you, “edgy.”

But you wore them and now you are too lazy to put pants on. So, there you stand in all your glory. Nice.

Ahem. Sorry.

I really like this top. To be fair, I thought it was a dress before I put it on. Once it was on, I just did not have the energy to rework it as a top. I am on a purchasing-sale-only kick right now, but if it is under $75 and it is a whole outfit, I might consider it. Unfortunately, this top fits neither of these categories at this time. But I will definitely reconsider it on sale. I am wearing a small here.

Also, in the red color on the site, the model is wearing the most amazing pair of blush colored pants. Does anyone know what pants those are?

Um, ’cause maybe I need some.

Please imagine I am not wearing bright pink tights with this dress? That question mark was a typo. But it fits this scenario. Try to imagine I am not wearing bright pink tights. Question mark. As in, how is that possible?

I know it’s hard.

This is a size small in the dress. It is called Ribboned Peasant Dress. It is on sale right now. Oh man, busty gals are going to love this dress. I have this tied as tightly as I could. I would have needed an XS in this and it still would not have fit me right. This is going to be phenomenal on the right body type. I cannot wait to see how some of the ladies are going to rock this. I am so jealous. This is a pass for me due to sizing issues.

I LOVED this dress online. It is called Galina Dress. I saved it in my wishlist along with some reddish boots and I would just stare at the combination side by side. Sigh.

Oh, you know you do it, too. ; )

But I am not in love with this dress on me. This is a size small, which I believe is the right size. The color is gorgeous. This seemed to be the hot item of the day, because I saw many ladies taking this dress into the dressing room with them.

I do not know what it is that doesn’t work for me. What do you think?

I removed this dress from my wishlist. The boots were heartbroken.

If you can’t tell, I love me some bright fun tights. I like a neutral dress I can play with to wear all of my happy colors throughout the winter. Because of my weight loss, I was down to one easy long sleeved neutral dress for the winter that worked in that category. I needed another one.

This fit the bill. In all ways, really. Including the actual bill.

It is a lounge dress. This is the Chiara Chemise. I do not know what exactly that means. “Lounge.” I guess I am supposed to lounge around the house in this.

But, we all ready know I will post pictures of myself sans pants on the internet, so it stands to reason that I would of course wear this out of the house. Everywhere. Fully standing. As in, not lounging.

Rebel. Hey, maybe I am edgy? Question mark not a typo here.

This dress is grey thermal. It is thin. It has cute little buttons on the shoulders. It was $68.

Oh man, you guys are not going to be happy with me. The pictures above are of me in the small.

But I was not comfortable in it. How could I lounge in something not comfortable?

I like to twist the word “lounge” to fit into whatever manipulation I am pulling at the time. It’s a fun little trick.

I tried on the medium, and I just liked it better. So, that is what I purchased.

I know! But it is so comfy.

I have all ready worn this three times with three different colored tights. And I am thrilled with this cute little number.

I have been taking to posting items I am interested in on these posts in previous months. Here is the situation: I am kind of burnt out on shopping. And I have only been making extreme sale purchases. I am being boring. It is the holidays and I just find it hard to purchase for myself during this time.

I yearn to stay inside, put something in the oven to bake, and crawl under the covers to read a good book.

I will, however, show you some stuff I think is cool right now and share with you my best deal lately.

Our book club book this month is “The Storyteller” by Jodi Piccoult. I usually do not read her books, but this one was very good. Maybe one of the best books I have read in a very long time. I have a book review coming up, but since we have not met for book club yet, I do not want to spoil it. If you have the chance to read it, we can discuss it in a few weeks. That would be fun!

I got this sweater last week for $9.95 as a popback from Anthropologie. I was worried about the condition it would arrive in (because it was last year’s item) but it is perfect. It even has the original tags. It was called the Lace Cables Pullover. It retailed for $148. Score!

Okay. I was set on buying this. I wanted it. Elsie looks incredibly lovely in this jacket on A Beautiful Mess. It is The Beckett Jacket from Shop Sosie. It was $66, which is perfect for my budget right now. I have a rule going on with myself that I will not consider any article of clothing right now unless: the item has to be full price for under $75 and at least 50% off on sale. It has actually been a fun little game. I have been able to stretch my budget and I have been enjoying my sale pieces immensely! Unfortunately, I debated too long (three hours) on what size to order and the jacket sold out. So sad!

I desperately need a new pair of black boots, but I keep buying brown. Black just does not seem to make it to sale and there is no way I am paying full price. In a dream world, these Empire Boots would stay in stock in my size and I could snag them (this one’s for you, Kirsten) for 1/2 off. I want the red ones, too. Awww, to dream.

And this Fern Forest Platter from Anthropologie. It is so beautiful. I am incredibly sad, because I waited and waited for the grey cake stand to go on sale. It did. I ordered it immediately. They cancelled the order a few days later. Since I will be waiting for this to go on sale, as well, I fear the same sad circumstance will occur. But, isn’t it pretty?

I did purchase the Petalblush Sweater Dress yesterday during Anthropologie’s new sale. I have been patiently waiting for this. And I love this dress minus the pink fluff. But I am willing to overlook that with this new price. Fingers crossed it ships!

And that is it for my wants this month. I have scooped up some fantastic finds on sale: two of them being the Elise Army Jacket for $20 and the Wisened Pullover for $50 (love! Photo coming up on Monday’s Reader Outfits on Effortless Anthropologie).
