Chocolate Chip Cookies

Chocolate Chip Cookies: the American Staple. I make these cookies at least once a month. They are always gone in two days. They are quick. They are easy. Nothing can make me quite as happy as a warm chocolate chip cookie freshly baked and gooey on the inside. It is what makes my soul sing. My heart dance.

I adapted this recipe from the Nestle Toll House recipe: Nestle Recipe Or as Phoebe from FRIENDS would say,”Nesele Tolouse.”

Ingredients

2 cups Semi-sweet chocolate chips
2 sticks of salted butter softened
2 teaspoons of vanilla
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 1/3 cups flour
3/4 cup of white granulated sugar
3/4 cup brown sugar (please do yourself a favor and buy the organic brown sugar. It is more expensive, but your cookies will be so soft. You will never regret it. Having said that, I was plum out. I had to use my backup brown sugar the day I made these. Therefore, I was sad).

Preheat oven to 375 degrees. If you have a convection oven, like me, preheat to 350 degrees on convect bake.

Combine both sugars and butter in a bowl. Beat on medium speed for one minute. Scrape sides. Add vanilla. Beat again for one minute. Add both eggs, one at a time. Beat the first egg for thirty seconds. Then add the second egg and beat for thirty seconds more.

At this point, I change my attachments on my kitchenaid mixer to install the paddle accessory. If you do not have this, continue to beat with handmixer on low. I do not sift my dry ingredients. I find it a complete waste of time and extra tools to wash. I add my salt and baking soda. And I beat at medium speed for thirty seconds. I then add flour one cup at a time and beat on low speed until completely combined. Stir in chocolate chips.

Place very large heaping tablespoons onto cookie sheet. Flatten with the palm of your hand. Bake for nine minutes. You might need to add a minute or two. Check after nine minutes. Cookies should be slightly brown. They should not deflate when touched in the middle. Transfer to wire racks to cool.

And then, bask in the glory of the delicious scent wafting through your house. The aromas have the effect of calming children and making them putty in your hands. Wait for five minutes and then indulge in your heart’s desire.
