It’s The Little Things: Small Artwork And I Need Help

Okay. Not necessarily help. I kind of need you to take my side. In a disagreement.

With my husband.

It has been going on for over a month.

My daughter recently finished these two art pieces. I love them. I think they are so cool. They are pen on burlap. And I enjoy all of the details she put into them. When I look at them, I see the pure joy of a teenager.

However, I have a dilemma.

My husband wants to hang them askew. So that one is taller than the other.

Can you imagine what that does to my OCD?

You guys, it can’t happen!

They will probably go underneath the painting of the vineyard my daughter did in fourth grade.

There is so much detail around all of the sides, I do not know how to hang them.

But, I do know my heart cannot take unevenness. Especially since I would see these from my place of worship my bed.

What should I do? Is there any other way or place we can hang them? I think side by side is fine, but they have sat on that chest for over a month, because we cannot make a decision.

Please help!

That hammer is no accident.

It is almost worse than paintings hung at an angle.

It’s The Little Things: Wondra

I am about to share somethin’ kind of embarrassing.

I know.

Shocking.

And the thing I am going to say won’t be very shocking either.

I hoard food.

And when I find something new I like, well, I buy as much as I can of the stuff.

Just in case,

You never know.

They could stop making it.

Or, um, there could be a zombie apocalypse.

Just so you know, each of those sentences caused a tightness in my chest.

I first bought some Wondra to add to my Momma’s Goin’ Out Crockpot Chicken that I make for my family. Wondra is a special type of flour that does not clump when added to a recipe. It is very fine. This makes it perfect for gravies.

I had never heard of it before last year. And I really cannot remember how I first heard of it. But if I were to guess, I would guess my best friend t.v.

I found it, of all places, on Walmart.com. And I assumed since I had never heard of it, well, they must not carry it at any of my local grocery stores. Of course, I did not check. Because when you are online shopping, everything is justifiable.

Everything.

So, I bought five containers of it.

As one does.

When they are a hoarder.

Or watch too much “Walking Dead.” Because if there was a zombie apocalypse, the first thing one would seek out would be non-clumping flour.

I wanted free shipping with that order, so I added some snack items to the mix to make my food order come to $50.

And I waited.

And Walmart shipped my small food order in four different huge boxes.

And my husband thought I was crazy.

More than usual.

As my food. From. Walmart. Arrived. In several boxes at the door.

I do have a point, I swear.

Anyhoo, the other day I was making chocolate chip cookies from this recipe. And I ran out of regular flour. I guess my hoarder side did not recognize that this was a possibility. The shame. I ran out of flour right as I needed it to add to my cookie recipe.

So, I checked my pantry. And I saw my Wondra.

I added 1 1/3 cup of Wondra and 1 cup of regular flour (all that remained of my stash).

And I baked my cookies.

The cookies were good. I could not tell the difference.

Until…

The next day, when I pulled a cookie from the cookie platter I usually keep them in. And the cookie… It was still soft! My dears, this never happens! My cookies always get hard overnight.

The next day… Still soft!

I made the cookies again. And it was the same occurrence. By substituting a little over half of the real flour with Wondra, my cookies kept their original fresh-out-of-the-oven texture!

It is a miracle.

I had to share.

It’s The Little Things: Soft Cookies!

Have you heard of Wondra? Have you tried it? In cookies? Who knew?

My cookie recipe available in the link above uses 2 1/3 cups of flour. I tried the Wondra trick a few days later substituting 1 cup of Wondra and using 1 1/3 cup real flour. The cookies were still softer than usual, but you definitely need the first ratio of 1 1/3 cup Wondra and 1 cup regular flour. Although, if you like your cookies really flat, than the one cup of Wondra was a perfect amount. They just were not as soft the next day.

The cookies made using the Wondra flour also seem to take less time to bake. So make sure you watch them so they do not burn.

And just so you know, the other day my husband and I were shopping together at the grocery store. He nudged me and said, “Hey! Isn’t that Wondra? The Wondra that you said was only available online? And now we have a whole shelf filled with it?”

I ignored the question. I ignored the little blue containers staring accusingly at me from the shelf. I ignored the other accusing stare as well.

But…

Yea. You can probably find this in your grocery store. And you probably don’t need to hoard it.

Spaghetti Carbonara

Spaghetti Carbonara is one of those deceptively easy looking recipes. And it is easy. Except, I will say you need to have a bit of cooking experience to be able to execute it well. If not made correctly, it will quickly turn into a scrambled egg pasta.

The whole dish only takes about ten minutes to put together after the noodles have been boiled, drained and set aside. But the last two minutes makes you hustle.

I use Rachael Ray’s Spaghetti Carbonara recipe. I have tried many and I feel hers is the best. I tweaked it very slightly. I changed the amount of spice and garlic, because that is what my family preferred. And I use good ol’ bacon instead of pancetta.

I wanted to write the recipe down and add some tips because I have learned some things that will make this recipe go more smoothly:

Ingredients:

1/4 tsp. red pepper flakes
1 pound package of spaghetti noodles
4 slices of chopped bacon
1 minced clove of garlic (or 1 tsp. from a jar or one handy little pocket from the frozen packet available at Trader Joe’s)
1/2 cup white wine (whatever you are drinking. The recipe calls for dry, but I have used a Riesling and it is equally as good)
3 large egg yolks
1/3 cup grated Parmesan cheese
1/4 tsp. salt
1/8-1/4 tsp. ground black pepper (start with 1/8 and see if it is enough)
1 cup reserved cooking water from the pasta

First things first. Freeze your four slices of bacon for twenty minutes. This will make it much easier to cut.

This part is purely optional: with the remaining bacon, I cook it in my oven with my oven bacon recipe while I prepare the Spaghetti Carbonara. My kids love to munch on the extra bacon with their pasta.

Boil a large pot of water. Add two Tablespoons of salt to the water once it is boiling. Add spaghetti noodles to the boiling water and cook according to directions on the package.

Separate egg yolks while spaghetti is boiling. This part is my favorite. It is so fun. Just crack your egg. Break it in half, keeping the whole egg in one half. Now pour the egg yolk into the other half of the shell. Keep doing this until the white has completely fallen out. Add the yolks to a small bowl and gently beat. Set aside.

Before draining the spaghetti, carefully reserve 1 cup of the boiling water.

Drain spaghetti. Set aside.

Chop bacon. Add to a large skillet and cook until crispy but not burnt. Usually this takes five to six minutes.

Add garlic and red pepper flakes and cook an additional minute. Add wine. Let simmer in the pan for two minutes. Scrape up bits of bacon pieces. Turn off heat.

This is where you are gonna turn into a super hero. Are you ready? Well, it doesn’t matter because you are all ready at this part. There is no turning back. Go ahead and flip that apron into a cape.

No! Don’t really do that! We’re working with bacon here! Keep that apron on and just imagine it is a cape. You are free to implement your fantasy after this dish is on the table. And won’t that be fun?!

The next steps need to be done in order and pretty quickly.

Slowly add 1/2 cup of the hot cooking liquid you reserved from the spaghetti noodles to the egg yolks while you are continuously whisking them. Keep whisking until all of the 1/2 cup is added. You do not want scrambled eggs! Add your water slowly.

Now add your spaghetti noodles to the wine and bacon mixture.

Immediately add your egg yolks to the spaghetti noodle mixture and toss and toss and toss. Right before your eyes the spaghetti mixture will start to come together and turn creamy. If it is looking too dry and not easy to toss, slowly add more of your reserved cooking water to it while you toss.

Add salt, pepper, and cheese. Toss some more.

Serve promptly! If you did this properly, you will now have an incredible creamy white pasta with bits of bacon in it. Your family will swoon at your feet. If you did this incorrectly, you will have chunks of eggs and be thankful that you made some extra bacon. Just don’t tell anyone you weren’t trying to make breakfast for dinner!

With A Light Heart Dress

I really loved the “With A Light Heart Dress” when it first came out and I saw Mary rock it on Happily Grey. So I ordered it. It came. I did not like it…on me. I wanted to look like Mary, darn it.

The dress went back and I even wrote it a review that wasn’t so positive. But I still liked the dress (on other people) and I wondered about it now and again. When I purchased the dress I was the weight I am right now, but I had just reached that weight. I think my body was still changing and settling itself, if that makes sense. Clothes purchased during that time fit me differently now even though I weigh the same.

Anyway, it went from $149 to $50 and I had to try it again. I ordered it in XS & S in both colorways so I could check it out one more time. This is the type of dress my husband hates. Sacklike.

Which translates to comfortable to me. I never need to be sexy, except on date nights. And even then, I am usually a bumbling fool. Who needs sweats when you can toss on an even more comfortable dress and dash out the door? It even has pockets!

I liked the XS, but it was too tight in the arms. The small looked how I wanted it to with enough flow in the arms to allow the dress to make sense.

This look is not for everyone. As in, not everyone is going to like this. I often get responses that I wear my clothes too big. And so this is another example of this. It is just what I like.

I sent back both navy and cream in XS and kept both of the smalls.

And also I apologize in advance for my dog, who has no shame.

The navy is my favorite, but I LOVE the pink stripes on the cream. It is just so bright and cheerful. The way Mary paired it with Simply Livly’s turquoise necklace is genius. I copied that here.

The navy reads almost black. Sorry about the photo bomber! Or the angle of the photo bomber, rather. How embarrassing! Poor guy. If he only knew.
